Nutrition knowledge plays a fundamental role in promoting health and well-being; however, knowledge alone does not always translate into healthier food choices. Bridging the gap between nutrition science and everyday dietary practices requires innovative approaches to food development that combine nutritional value, safety, sensory quality, affordability, accessibility, and consumer acceptance.

This presentation discusses the importance of transforming evidence-based nutrition knowledge into practical and innovative food products. Particular attention is given to the role of nutrition professionals and multidisciplinary collaboration in identifying nutritional needs and translating scientific knowledge into food solutions that respond to consumer and community needs. The potential value of locally available ingredients and traditional food resources is also highlighted as an opportunity for developing culturally acceptable and potentially sustainable food products.

Food innovation should extend beyond the creation of new products. It should be guided by scientific evidence, appropriate nutritional evaluation, food safety, quality assurance, consumer acceptance, and responsible communication of nutritional information. Such an approach can contribute to healthier food environments while supporting innovation, local resources, and sustainable food systems.

The presentation emphasizes that the future of nutrition depends not only on generating scientific knowledge but also on effectively translating that knowledge into practical solutions. Strengthening collaboration among nutritionists, dietitians, food scientists, researchers, industry, and communities can help transform nutrition knowledge into meaningful products and healthier choices.
